Chicken Casserole

My mother-in-law used to make the most awesome chicken casserole. I really miss her casserole that she would make just for me because she knew it was my favorite. I have searched thru her recipes hoping to find the right chicken casserole. Do you have any idea how many different chicken casserole recipes there are.? A ton! Well last night I was once again looking thru one of her recipe books and I was so sure I had found the 'one'. I made it tonight and it was real close but still not hers. I am going to keep this one for mine because it is sooooo delicious and very simple to make.

This is how I made my chicken casserole. I boiled the chicken breasts the night before with seasonings ( I used season all). You will need to shred the chicken real fine and this works better if the chicken is cold. I used 3 chicken breasts.

3 chicken breasts finally shredded
2 cans of cream of chicken soup
8 oz of sour cream
1 tsp of chicken bouillon or 1 cube of chicken bouillon
2 packs of Ritz crackers finally crushed
1 stick of butter melted

Spray the casserole (8x10) dish with non-stick spray
Layer the chicken in bottom
Bring the soup, sour cream and bouillon to a boil and pour over the chicken
Mix the butter with the crushed crackers and put on top
Bake uncovered at 350 degrees for 30 minutes
